Easy Peach Crisp for One

I don’t know about you, but I LOVE dessert. I have a major sweet tooth that I’ve worked really hard to reign in over the last decade or so 😉 I also love peaches. My beef with dessert is that sometimes, though, I just want one serving. Like, I don’t need 29 cupcakes sitting on my kitchen counter, starting at me, begging to be eaten. Enter peach crisp for one! It’s an easy recipe that comes together in less than 15 minutes. It’s sweet, nutty, juicy, and a great way to celebrate the final days of summer!

Peach Season

Pennsylvania isn’t necessarily known for its peaches, but we are known for incredible, fresh produce. There is an orchard about five minutes away from where I live. Check them out here! Towards the end of summer, they start picking and selling their apples and peaches. Let me tell you, I don’t think I’ve had better peaches than fresh, orchard-picked peaches in Central Pennsylvania. When they hit their peak, they are so sweet and juicy. I’m not sure there’s a better way to celebrate summer.

Ingredients to Use

Fresh peaches. While you can use frozen or canned, it’s not going to turn out the same as freshly picked, ripened peaches. It’s also not going to be the same if you get fresh peaches from the grocery store. I just love heading over to my local orchard because I know exactly where the peaches came from and when they were picked!

Granulated sugar. You’ll want to sprinkle some sugar over the peach slices to draw out the liquid. This reduces the amount of liquid you’ll get in the final product.

All-purpose flour. This helps to thicken the liquid from the peaches and hold together the topping mixture.

Brown sugar. Adds a nice caramel flavor.

Melted butter. You can use cold butter, but melting the butter skips the step of cutting it into the topping mixture. Just be aware that you might get slightly more liquid in your final product.

Oats. Oats add a chewy, dense texture to the crisp and make it oh, so delicious!

Pecans. You can essentially use any kind of nut that you want to in this recipe, but I think that pecans pair really nicely with all the other ingredients in the recipe.

Vanilla. This is simply used to enhance the already yummy flavors in this recipe.

What Peaches to Use for the Crisp

My local orchard produces EIGHTEEN (!!) different types of yellow and white flesh peaches. I didn’t even know that many existed! Honestly, I thought it just came down to white and yellow. With any baking I do that involves peaches, I always use yellow flesh peaches.

You can use frozen or canned if peaches aren’t in season or if you don’t have them locally where you live, but to be honest, this peach crisp is not going to turn out as delicious. It’s also not going to be the same if you get fresh peaches from the grocery store. I just love heading over to my local orchard because I know exactly where the peaches came from and when they were picked!

Making the Peach Crisp

1. Preheat your oven and prep the peach. After preheating your oven to 375 degrees F, cut your peach in half and peel it. If the peach is ripe enough, the skin will peel off very easily. After you peel the peach, cut it into thin slices; not paper thin, but no more than ¼ inch thick.

2. Use sugar to draw out the liquid. After slicing your peach, place the peach slices in a mesh sieve that’s sitting over a bowl. Sprinkle 2-3 teaspoons of sugar and lightly toss. You’ll let these set as you prep your topping. The sugar draws out the liquid from the peaches. Setting the slices in a mesh sieve while the peach drains just makes this recipe even easier, so there’s no transferring them anywhere except into your ramekin.

3. Prep the topping ingredients. Mix together the flour, brown sugar, nuts, and oats. In a small bowl, melt the butter and add vanilla to the melted butter. Then pour the melted butter into the mixed dry ingredients. Stir with a fork.

4. Put it all together. After the peach slices have drained, layer them into a small ramekin (no bigger than 6 inches; the one I used was 4 inches in diameter). I actually melted the butter in a ramekin and placed the peach slices into the ramekin where the butter had been melted. Extra yum! After you layer in the peach slices, crumble the topping onto the top of the peaches.

5. Bake it. This easy peach crisp for one gets baked at 375 degrees F for about 20-25 minutes. Because it’s a single serving, it doesn’t take quite as long as a full recipe would.

6. Let it sit before enjoying. Once you pull your crisp out of the oven, not only is it going to be very hot, it’s also going to be very juicy. As the peach crisp cools, the liquid will thicken. I don’t like mine scalding hot, so I’m willing to wait until it’s closer to room temperature. No judgement if you can’t wait that long!

Easy Peach Crisp for One

Ingredients
  

  • 1 medium sized peach
  • 3 tsp granulated sugar
  • 1 Tbsp all-purpose flour
  • 2 Tbsp brown sugar
  • 2 Tbsp old-fashioned oats
  • 2 Tbsp chopped pecans
  • 1 Tbsp melted butter
  • ¼ tsp vanilla

Instructions
 

  • Preheat your oven to 375 degrees F and set a mesh strainer over a large bowl.
  • Cut the peach in half and then peel the peach. Thinly slice the peach and place into the strainer.
  • Sprinkle the 3 tsp of granulated sugar over the peaches and lightly toss. Let the peaches set for at least 10-15 minutes and while you mix the other ingredients.
  • In a small bowl, mix together the flour, brown sugar, oats, and pecans. Set aside.
  • Place butter in a small bowl and melt in the microwave. Mix in the vanilla.
  • Pour the butter-vanilla mixture into the dry ingredients and mix with a fork.
  • Lightly shake the mesh strainer to shake off excess liquid. Reserve or discard the extra liquid. It make a great syrup!
  • Layer the peach slices in a small ramekin (no bigger than 6 inches). You may not use all the peach slices if it start to get full.
  • Crumble the topping over the peaches.
  • Bake in the preheated oven for 20-25 minutes, or until the topping is golden brown.
  • Pull out of the oven and cool for at least 15 minutes. It will appear very juicy when you first pull it out of the oven, but the liquid will thicken as the peach crisp cools.

Notes

Storing and Reheating
You can easily store this in the fridge for a few days if you’re not going to eat it right away! Simply cover with foil or plastic wrap once the crisp is completely cooled and transfer to the fridge. To reheat, microwave for about a minute, until the crisp is either warm or hot, depending on your temperature preferences.
